Do we have to offer both projects at each class?

Do we have to offer every student a choice of the two projects at each class? So far I've only taught the single crochet class. In that class it's easy to get students started on whichever project they want since the only difference for getting started in the number of chains to start with.

I'm working on the samples for the textured stitches class right now and realizing how different the two projects are. Unless the students are pretty advanced and comfortable reading the patterns, I'm not sure how to teach both patterns in the same class. Can we limit each class to one or the other of the patterns or are we expected to do both if some students want one pattern and some want the other? Has this come up before? How have you handled getting students started on two such different patterns at the same time?
