How are you handling disappointed students?

Hi everyone,
Now that we have to have 2 students to run a class, how are you handling students that are disappointed when you have to cancel a class? Like many of you many of my classes were with one student, and now these students are not happy when I have to cancel. I am actively working to promote my classes (as I was before) but it is still a challenge to get people to want to work on the same thing.
I tried to get Yarn night going but both of my attempts were pretty sad. I choose a Sunday thinking that more people could attend but the first one had only one person and the second had two. (improvement yes.. but not enough to justify paying me for 3 hours!)
I have several students that liked to work on specific projects with the Discover Time for crochet who are now upset that they can not book a class. I'm not quite sure how to work them into another class.
Any suggestions?
